DOUGH
What You Need:
1c water
3c flour
Bowl
Wet paper towel/cloth
What You Do:
1. Add 1c water and 3c flour in a bowl. Knead until all ingredients are thoroughly combined. Form into a ball, which won’t be smooth.
2. Cover with a wet paper towel or anything else to keep it from drying.
3. Let sit for at least 20 min, not more than 1 hr.
4. After resting time, take the dough and knead for a few more min, it should start to smooth out more.
5. Again, cover with a wet paper towel and let it sit for 20 min-1 hr.
6. After the second rest, knead the dough again and it should be pretty smooth. If not, just give it a few more minutes of kneading and another resting period.
FILLING IDEAS
– Pork filling: 1lb ground pork / 1 egg / 1T cooking wine / 2T soy sauce / chopped scallions / grated ginger root / salt / sugar / napa cabbage (optional)
– Veggie filling: chives, carrots, onion, mushroom, cabbage, sesame oil, soy sauce, black pepper, salt – TBM (to be measured)
– Chicken filling: 1lb ground chicken / 1 egg / 1T cooking wine / garlic / ginger / scallions / cilantro / napa cabbage / soy sauce / sesame oil / black vinegar / salt / sugar / starch (optional)
