- Dough: 1c water / 3c flour
- Pork filling: 1lb ground pork / 1 egg / 1T cooking wine / 2T soy sauce / chopped scallions / grated ginger root / salt / sugar / napa cabbage (optional)
- Veggie filling: chives, carrots, onion, mushroom, cabbage, sesame oil, soy sauce, black pepper, salt – TBM (to be measured)
- Chicken filling: 1lb ground chicken / 1 egg / 1T cooking wine / garlic / ginger / scallions / cilantro / napa cabbage / soy sauce / sesame oil / black vinegar / salt / sugar / starch (optional)
- buns (包子)
- Dough: 1.5c water / 4c flour / 2T sugar / 1t salt / 2t active dry yeast or bread machine yeast, or 1 packet
- Pork filling: 1lb ground pork / 1 egg / 1T cooking wine / 2T soy sauce / 2T corn starch / chopped scallions / grated ginger root / salt / sugar / napa cabbage
- Bok choy filling: bok choy, ginger, sugar, salt – TBM
